Citric acid is an organic acid widely
distributed in the plant kingdom. It can be
found in high concentrations in citrus fruits
and has a sharp, sour taste. At one time it
was commercially prepared from concentrated
lemon juice, but now the main source is the
fermentation of sugar with certain moulds.
